Coconut Coleslaw

Red Onion
1/2 a large red cabbage or 1 whole small one

1/2 tin low-fat coconut milk

1/2 teaspoon cayenne pepper

pinch of salt

pepper to season

Shred the cabbage, slice the onion finely and grate the carrots, place into a large bowl and mix.

Carrots
Mix the rest of the ingredients together then pour into the cabbage mix. Stir together, cover and place in the fridge for at least 15mins.

Serves 4 as a side dish.
