Nigel Slater's Cabbage and Black Beans

A really simple supper that’s quick to make and feeds 4 as a side. Adapted from Real Fast Food.

1 can black eye beans

1 savoy cabbage, shredded

2 onions, finely shredded

3 tablespoons olive oil

salt

pepper

Heat 1 tbs oil in a frying pan and add the drained tin of beans, fry for a couple of minutes then put aside.

Heat 2 tbs oil in the same pan, add the onions and cook slowly for 10-15 minutes, it should caramelise slightly.

Add the cabbage and cook for a couple of minutes then add the beans, season with salt and pepper.

We ate this with a couple of sausages.
