To celebrate our oven getting its mojo back (its not been working for weeks) i decided to make a crumble. I only had a couple of apples so decided to make a crumble with a twist… enter ‘apricots’…
2 medium cooking apples (400g /16oz), peeled, cored and sliced
75g (3oz) dried apricots, chopped
Juice of 1/2 a lemon
2tbsp maple syrup
50g/2oz butter or sunflower margarine
25g/2oz wholemeal flour
50g/2oz large rolled oats
50g/2oz medium rolled oats
50g/2oz demerara sugar
1/2 tsp cinnamon
I didn’t have large rolled oats so just used 100g of medium ones.
- Preheat the oven to 190°C/375°F/gas 5
- Put the apples and apricots in an ovenproof dish with the water, lemon juice and half the maple syrup and put in the oven for around 10 mins, until the apples are partly cooked.
- Meanwhile put the butter, wholemeal flour, rolled oats, cinnamon and soft brown sugar in a bowl and rub together to form a rough crumb mixture.
- Sprinkle the crumble mixture over the partially cooked apples, drizzle the remainder of the maple syrup over the top and return to the oven for a further 15-20 mins until the top is golden.
