Simple, Quick Roasted Veg with Sausages & Cabbage

Its been so cold lately, this winter warmer is exactly what we needed. Quick and easy to make.

We used:

  • Carrots, Parsnips, red onions and onions from our veg box this week.
  1. Chop up all the veg into chunks and cover liberally with olive oil, rosemary, salt and pepper.
  2. Roast in the oven for 40 mins at 200 deg C.
  3. Boil savoy cabbage and fry a couple of sausages – we got veggie bratwursts from Unicorn in Chorlton.
  4. Serve – enjoy!
