Quince brandy liqueur

This is a follow on from a previous recipe, Nigella’s Quince Brandy. It makes a sweet dessert drink and if you are not partial to drinking brandy, no matter how nice the quick brandy is, this is a great way to re-package and mak a lovely fragrant after-dinner drink.

  1. Strain the quince brandy from the quinces and cinnamon sticks etc. I used a piece of muslin in a sieve over a bowl
  2. Make a sugar syrup, as I had 350ml brandy, I needed 120g caster sugar and 120ml water
  3. In a saucepan, add the water and sugar, stir to dissolve and bring to the boil for a minute – don’t let it go brown
  4. Let the syrup cool
  5. Add the brandy and syrup to a sterilised jar, give it a shake and its ready to drink immediately.

NB: I might try less syrup next time – maybe add the syrup in gradually and taste as you go to get the right level of sweetness
